Here is a quick note on the possible fruity variations on the simple cake.
The rule is apparently quite simple.
Strawberry Cake: Add 1 cup of strawberry crush, and reduce sugar by 1/2 cup
Mango Cake: Add 1 cup of mango puree , and reduce sugar by 1/2 cup. This one does not rise so easily. You must use buttermilk for this.
Carrot Cake: Add 1 cup of grated carrot, and 1 tsp of cinnamon powder, and 1 tsp of grated nutmeg.

- For every cup of pureed fruit, reduce 1/2 cup flour.
- For every cup of solid grated fruit, reduce 3/4 cup of flour
- Replace with 1 cup buttermilk + 1/2 tsp baking soda to moisten the cake instead of 1 cup of milk + 1 tsp baking powder
- Baking soda reacts with buttermilk better to create more fluffiness
- instead of 1 cup buttermilk, you can use mixture of 1 cup milk and 1 tbsp vinegar, kept for 10 mins, and stirred before addition to cake
