Ingredients
Salmon fillet around 300 gms
Sherry 30 ml
Fresh Thyme leaves 1 tbsp
Lemon wedges
Mayonnaise
Salt
Pepper
Process
- Scale the salmon fillets , pat dry and place them flesh down on porcelain baking tray
- Pour the sherry into the tray such that the flesh is in contact
- Leave for 30 mins
- Flip the fillets over so that the skin is down
- Sprinkle with thyme leaves, salt and pepper
- Leave for 15 mins
- Bake at 150C for 20 mins
- Remove the fillets into separate plates
- Decant the juices into small bowl
- Pour mayo and honey into the bowl
- whisk it together to form the sauce
