Sherinated Salmon with Herbs

 Ingredients

Salmon fillet around 300 gms

Sherry 30 ml

Fresh Thyme leaves 1 tbsp 

Lemon wedges

Mayonnaise 

Salt 

Pepper


Process

  1. Scale the salmon fillets , pat dry and place them flesh down on porcelain baking tray
  2. Pour the sherry into the tray such that the flesh is in contact
  3. Leave for 30 mins
  4. Flip the fillets over so that the skin is down
  5. Sprinkle with thyme leaves, salt and pepper
  6. Leave for 15 mins
  7. Bake at 150C for 20 mins
  8. Remove the fillets into separate plates
  9. Decant the juices into small bowl
  10. Pour mayo and honey into the bowl
  11. whisk it together to form the sauce
